📍8th Floor, Grand Hyatt Hong Kong, 1 Harbour Road, Wan Chai I saw THE MENU by Masterschefs recommended on DiningCity, so I immediately booked a table to try this restaurant selected in the 2025 Michelin Guide, located at One Harbour Road, Grand Hyatt Wan Chai Convention and Exhibition Centre. This time, the menu is paired with DiningCity’s event, launching the selected Chef Masters Menu, which feels very grand and makes us really look forward to it. 𝗪𝗛𝗔𝗧 𝗪𝗘 𝗢𝗥𝗗𝗘𝗥𝗘𝗗 First on the table were three kinds of Chinese sauces: Doubanjiang, beetroot sauce, and the signature homemade XO sauce. Among them, the XO sauce was especially outstanding, especially paired with the menu’s flower silk soup and grouper fillet. ✨ Crystal Century Egg with Pickled Ginger The crystal century egg is more refreshing and bouncy compared to eating century egg directly. The pickled ginger flavor is strong, fragrant but not spicy. Century egg with pickled ginger is already a very tasty snack, but after the chef’s careful improvement, the texture is enhanced and the flavors blend even better. ✨ Zhenjiang Vinegar Fragrant Black Pork Tenderloin It’s really tender when you bite into it! This kind of tender texture is hard to imagine coming from pork tenderloin 💕 ✨ Salted Egg Yolk Prawn Balls The salted egg yolk coating is crispy and not greasy, like a thin layer wrapped around the prawn balls, delicate yet sufficient. ✨ Thick Soup with Fish Maw and Shredded Chicken Eating this really gives the feeling of having snake soup, combined with crispy chips and crunchy wood ear fungus strips. Adding a little XO sauce makes the flavor even more layered. ✨ Fresh Sichuan Pepper and Cordyceps Flower Steamed Grouper Fillet This dish with strong numbing aroma of Sichuan pepper and cordyceps flower steamed grouper fillet is their signature dish. The numbing fragrance of the pepper penetrates every bite of the grouper. Unconsciously, I kept eating it all, completely addicted to its flavor 👍🏻 ✨ Braised Whole South African Abalone with Green Vegetables and White Mushrooms ✨ Stir-fried Crispy Red Rice with Preserved Vegetables, Char Siu, and Scallop Pieces It smells like preserved meat rice, and the taste is soft, bouncy, and crispy. The chewy scallops, crispy red rice, combined with the aroma of preserved vegetables and char siu pieces, create a layered texture and flavor.
