I only checked the Instagram of 2 pastry shops: Chef @Cedricgrolet and Thai chef @misterchou.bkk. I watched them for years, watching them experiment with making pastries. Their pastries are beautifully and exquisitely layered. I have to use this word, it's so beautiful. Finally, the chef's shop @sauvage.bkk has opened.
No. 1 is their dough, but the fillings and other components of each menu are also top-notch.
I tried 3 out of the 4 regular menus (the menu is still limited because we think the chef must be very confident before releasing them as the real thing in front of the cabinet).
🌟 #Millefeuille: vanilla & Smoked vanilla gel
Look at the layers of dough that the chef made. Is it clear that it's really skilled?
The dough is crispy, crunchy, light, flaky, but has a strong aroma. The taste and texture are rich and dimensional, with ingredients. The top is glazed thinly. The dough is not soggy at all. It's so delicious that you can suck your fingers.
The vanilla cream has a smooth texture. You can feel the complexity of the flavors. Very delicious, vanilla cream alternating with smoky vanilla gel. The smell of smoky vanilla gel has a strange but good smoky aroma.
🌟 #Choux: Three cheese Gougère
Choux dough, light, crispy outside, soft inside, not crispy, heavy cheese, cheese version shouting with a microphone, full of 3 types, 3 flavors and 3 textures, cream, crisp sheet, baked crisp, and paste, rich, salty, fragrant, creamy.
🌟 Lemon Turnover This one is not on the menu, but the chef tried it and brought it to sell. The dough is good, no doubt, crispy, light, crumbly, fragrant, but the filling is a surprise. The chef made the filling well. The lemon zest is a little sour, followed by a little sweetness, but very fragrant, no bitterness, so the skin that does not stick to the white part (or not?) must be used.
The chef's dessert is not greasy at all. Eating it, your hands and mouth are not greasy, but you can feel that the ingredients are premium and only good. It is a dough that is joyful and heals the heart. Don't feel guilty about the body that if you're going to eat carbs, it has to be good stuff like this.
A small shop but the atmosphere is good. There is a big tree in the middle of the shop. There are 2 tables with 8 seats and 7 more seats at the bar.
I recommend making a reservation if you want to sit in the shop and prevent the dessert from running out. Customers come in nonstop. In the afternoon, the dessert starts to run out.
I haven't had a chance to try the chef's 2 other signature menus, Flan and Kouign Amann, because this is Pharos (far from home 🤣). Thinking about it makes me envious of the people of Lak Si who have this shop. So annoying.
