"Soy sauce western" efers to a certain way that western cuisine is adapted to meet the preferences of the local populace in Hong Kong in affordable prices. Yet the idea is not just that soy sauce is used in the food. It is a phenomenon in the long evolution of Hong Kong’s local cuisine. As a cheaper version of proper western cuisine, soy sauce western emerged to meet the demand for all things western as Hong Kong people became increasingly keen in sharing in the privilege of the west in the mid to late 20th century or so. It is about the yearning to participate in the high society of Hong Kong, which was, in the beginning decades of colonialism, off bounds to the Hong Kong Chinese. The idea of soy sauce western is infused with cultural implications. At the most fundamental level, it changed the dining habits of the Hong Kong Chinese by introducing the custom to eat with a fork and a knife, even for rice. It is therefore a true expression of Hong Kong society’s world-famous character as it is the forerunner of “east meets west.” The Flying Eagle began its first chapter in Macau in 1971. It then moved to Hong Kong in 1977 and has been in Sham Shui Po since. It remains a business of the Wu family throughout the past decades. In its heyday, Flying Eagle positioned itself as a high-class restaurant for the merchants and factory owners to meet and discuss business. The aged brown walls, the light fixture of the 1980s, the memorabilia of a bygone era — all are the hallmarks that brings one back the early 1980s, at the cusp of a roaring decade that defined Hong Kong’s future in all matters of politics and economy. Its most famous dish is steak on a sizzling hot plate (HK$138), which is certainly a soy sauce western classic. Although that is served during lunch, I opted for the set lunch menu for HK$50. There were two choices, either pork chop or beef tongue, and I had beef tongue over white rice. In 1904, the Ex-Sham Shui Po Service Reservoir completed. It served the water needs of residents in Kowloon Tong, Sham Shui Po and Tai Hang Tung. The Service Reservoir comes in a round structure. A simple mathematical truth explains this design – the circumference of a round structure enables a larger volume than a rectangular structure with the same perimeter. The top vault of the Service Reservoir is also built in concrete. The rounded arches, along with the brick walls, allowed the loading to be transmitted onto the side structures, then onto the foundation. This is how the structure was able to hold its weight. There is tar on the ground, further sealing the space and prevent cracks. Originally there were 108 granite pillars with red brick arches. After the new wall, there remained 78 pillars. Our tour guide emphasized a few times that, contrary to popular perception, the interior architecture of the Ex-Sham Shui Po Service Reservoir is not of Roman style. It merely imitates the Roman Style. I asked what distinguishes a “truly” Roman and a mere imitation. He said that, in a truly Roman style, there would be no flat surface. After the beef tongue specialty store in To Kwa Wan, #wafflesandshrimpcakes I finally tried the GYU TOWN #beeftonguespecialty store in Sham Shui Po. It is a small Japanese-style restaurant with less than 20 seats, and it was always full of diners during meal time (around 2pm on Sunday). There is a picture of an ox tongue hanging on the wall. Looking at the menu, the food is divided into three categories, namely Teppanyaki series, Imperial series. There are box dishes and single-serve items, including rice bowl, udon and hamburgers. I ordered a teppanyaki #二重牛舌 and added 38 yuan to get the upgraded set meal, which includes soup, salad, soda, and a hot spring egg donburi overflowing with beef tongue tendon. It is a homemade triple satisfaction and seems more attractive than the triple beef tongue "lunch box". The double beef tongue has #beef tongue tip and #beef tongue core. The #original beef tongue core is very refreshing, but the noodles are a bit raw, which may not be acceptable to everyone. The tip of the beef tongue is chewy and relatively soft, and is loved by both adults and children. The portion of the overflowing beef tongue hot spring egg donburi was larger than expected, and it really was "overflowing". The beef tongue was cooked tender and tasty, and it tasted sweet, making it a great accompaniment to rice. The Angus beef shank with beef tongue was relatively inferior, and as for the waffles and shrimp cakes, I decided to just eat the beef tongue next time I visit. Lau Sum Kee is a historic restaurant in Sham Shui Po. As a third-generation owned noodle shop, the restaurant has been making its famous zuk sing noodles for over 70 years. The restaurant started in the 1940s, when the grandfather of the current owner, Lau Fat Cheong, was selling zuk sing noodles in Guangzhou’s streets. Lau Fat Cheong’s father came to Hong Kong during the Civil War of China, and began selling its signature, handmade zuk sing noodles in the streets of Shau Kei Wan. It then found its roots in the equally famous food haven of Sham Shui Po in the 1950s. In the 1970s, the family acquired the license to run a dai pai dong (street stall restaurant) in Sham Shui Po. It found its permanent home in the 1970s when they secured a proper restaurant space, also in Sham Shui Po. Bamboo Noodles, A Comfort Food for Hong Kong People The traditional technique for making zuk sing noodles involves the use of a long bamboo staff to apply pressure on the noodle dough. The dough is placed on one end of the two-meter bamboo staff. The chef making the noodles uses his own body weight to press on the other end. Sodium bicarbonate, commonly known as baking soda, is a common ingredient in both the making and the cooking of bamboo noodles. Baking soda consists of potassium carbonate and sodium carbonate. Mixed with hot water, these two compounds will give the zuk sing noodles its enchanting texture — silky, chewy and bouncy on the roof of your mouth. Boiling baking soda with hot water is a common way to both make the noodle dough and to cook the noodles. Making noodles this way will also preserve the noodles longer. The baking soda water that is used for cooking the noodles is never served in the bowl. Instead, a prepared broth is used as the soup base that is served with the wonton noodles. The architecture evokes Ancient Rome or Greece rather than modern Hong Kong, the staff are friendly, and the audio guide is educational. Access: Walk for 5 minutes from Sham Shui Po MTR station Exit C1/C2. Before the inauguration of V Walk, it is the only large shopping mall in the district, so somehow its importance in the district is declining. The Christmas decorations at Dragon Centre are also pretty unsurprising.

Must visit if you are a lover of soya bean drinks and soybean curd. Eat like the locals with red sugar on top or simply enjoy plain on its own. This has the best soft texture I have ever tasted. They also sell pan fried stuff beancurds in the shops and are popular with both locals and tourists. We also bought a bottle of their fermented beancurds sauce that goes best with white porridge.
