For our first dinner in Dunhuang, we had some skewers. Since it was off-season, there were not many people there at mealtime. I tried sand onion for the first time, which was quite delicious. It was like a healthy vegetable. I ordered some beef, mutton, and mushrooms. Except for the beef tendon, which was a bit hard to chew right after it was served, everything else was fine. The beef tendon had to be grilled on the charcoal fire for a while before it became soft and tender. It tasted very good when it was soft and tender.
