Shuipen mutton has a long-standing reputation. It is made of deboned fresh mutton, bones, cinnamon, pepper, fennel, grass fruit, refined salt and monosodium glutamate. It has three processes: raw material processing, mutton boiling and cooked mutton preparation. When eating, it is eaten with sesame cakes or Baiji steamed buns, and served with sugar garlic, chili sauce and fresh garlic cloves. The meat is tender and the soup is clear. It is fat but not greasy, mellow and delicious with a unique flavor.
