Stone pot fish, also known as Jinfu fish, is a famous dish in Hunan cuisine. It is made in a unique way. A large stone pot with two handles is chiseled out of a large granite rock. The fish is placed in the stone pot and fried. Then, various condiments, mainly pepper, and some nourishing herbs are added. In the early Qing Dynasty, during the reign of Emperor Kangxi, there was a small shop on the banks of the Xiangjiang River in Changsha that was good at making a "stone pot fish" with a unique flavor. When Emperor Kangxi went to the south of the Yangtze River in disguise, he tasted this dish in this small shop and felt that it was extremely delicious. He was very pleased, so he happily picked up his pen and named this dish "Jinfu fish".
