Many larger Xinjiang restaurants in Beijing have baked buns. I ate them several times but never really appreciated their deliciousness until I came to Xinjiang…
This restaurant has a high rating in reviews and is said to have been featured in Breakfast China. It is very close to the Mercure Hotel where we stayed, so we were able to rush over early in the morning to eat the first batch.
When we arrived, there were already three locals waiting in front of the stall. In a few minutes, the first batch of buns was about to come out of the pot. Seeing the spectacular sight of buns all over the naan pit really makes people feel the uniqueness of Xinjiang cuisine.
The young man in the store skillfully used a small shovel to "catch" the baked golden buns one by one into the net. 3 yuan each, the price is good, so I bought 20 first.
The square baked buns have a slightly burnt, thin and crispy skin, and are filled with solid hand-chopped beef fillings. The saltiness is just right, and pepper, onions and other seasonings are added. You can feel the gravy when you take a bite. Regardless of the heat, the two of us ate 8 first, and it was comfortable~ It turns out that this is the "true face" of baked buns.
