Goryū Kubo is a restaurant with two Michelin stars that has risen rapidly in recent years. The main feature is the dashi. The bowls are made with tuna knots, and the ending juwari soba is made with mackerel knots. The chef is also very picky about the freshness of the ingredients. It is satisfying to be able to eat the red bonito directly delivered from Yakitsu Port in the morning and the new rice of the year. The Hokkaido saury grilled with the internal organs is also a test of the freshness of the ingredients. I had a great chat with the female chef about the ingredients and cooking techniques.
