I left the hotel at around 9am and rushed to the stone carving park to watch the Hui'an women's folk performance without even having breakfast. I happened to see this Ruifang fish roll shop on the small slope of the parking lot outside the stone carving. There were a lot of fish rolls, fish balls and other seafood in various packages on the shelves and freezers of the shop, and fresh fish rolls and vegetables on the stainless steel racks. The shop owner asked us to sit down and introduced her food and cooking methods. After listening to her introduction, we learned that the famous fish rolls are made of mackerel! We each ordered a fish ball noodle soup and a fried fish roll. There was also a little fish roll and two kinds of fish balls in the noodle soup, which tasted light and fresh. But the noodle soup was too hot, and I was sweating while eating it! The fried fish rolls have water chestnuts added to them, which makes them more crispy! This will no longer be hot if you leave it for a while, and it will taste great if you dip it in some local sweet and spicy sauce! Don’t wait until it’s completely cold before eating it, as it will be very greasy and not tasty!
