The pork chop is not cut, but served in one piece, with the bread crumbs and pork chop meat combined into one, like a large golden meat pie, placed on a small iron plate with a layer of oil-absorbing paper underneath. There are two types of meat in a whole pork chop, two-thirds of which is tendon meat and one-third is pork belly.
