Maria generously opened her own home and kitchen to my husband and I for this hands-on cooking experience. We learned how to choose green plantains and make cheese stuffed empanadas, which are delicious and healthy - a real game changer if you want to avoid gluten or typical wheat flour doughs. Pressing the empanadas was fun - we have already ordered a tortilla press for our home use and will make this recipe frequently. We also made fresh shrimp ceviche and learned that Ecuadorians cook the shrimp first. Many of the ingredients came from Maria's own backyard, which is an amazing array of fruit trees (50 foot avocado trees!) and herbs. The lemon verbena lemonade was amazing! We had Maria arrange a private ride for us from the Wyndham Quito Airport hotel for a very reasonable extra fee. I highly suggest this, as she lives in a gated community and our driver knew how to get in. The drive was beautiful and interesting - especially the neighboring town with all the guinea pigs hanging on the street. We did not eat any of these, but wow are they huge!

Pros: we absolutely loved this tour. Diana, our guide was amazing, welcoming, friendly, answered questions, and was accommodating with stops for the bathrooms, coffee, and just to take photos. And of course hiking Cotopaxi was incredible. Plus the lunch was to die for. (And good vegetarian options!) Cons: the agenda listed horseback riding, hiking, and lunch. About 2hrs in we asked when we would be horseback riding and were told actually this tour had none! Not sure if we were put on the wrong tour or if this was just a change of plans, and we were more excited about hiking anyhow, BUT! If you desperately want to horseback ride, triple check. 🤣

Absolutely phenomenal experience, worth way more than what I paid. Rasu is deeply knowledgeable and very fun and welcoming. I learned so much about the indigenous cultures and history of Ecuador in such a short time! I was exposed to some of the best views and most beautiful architecture. The cacao tasting was a truly special experience! I feel terrible for forgetting my cacao expert's name (Demi?) but she was fantastic and I learned so much from her, as well. Rasu was kind enough to educate me about recent and current events, and getting a summary from a local is a quite invaluable experience. There were more treats and gems, but I'll let you discover them for yourself!
