🍃As a backpacker wandering in Chiang Khong, a small town in northern Thailand, RIMKHONG RESTAURANT by the Mekong River is definitely the most unforgettable &quot;taste base&quot; of my trip. This is not only a place to fill your stomach, but also a healing corner where you can stare at the Mekong River and watch the boats 🚣🏻&zwj;♀️ slowly passing the Lao-Thai border. Here is my personal test guide to help you unlock the hidden delicacies of this restaurant! 
【📍 Location and 🌳 Environment】
The restaurant is located on the main road along the Mekong River in Chiang Khong Town, close to the pier, and it is very convenient to walk 🚶🏻&zwj;♂️ or ride a motorcycle 🛵. There is a wooden sign hanging at the door, with bamboo lighting and green plants 🎍, which has a rural style in northern Thailand. Be sure to choose an open-air seat by the river! In the evening, the river is shining with golden light, and the shadows of the mountains in Laos on the opposite bank are looming, and the atmosphere is directly full. 
【🍽️ Must-order signature dishes】 
1⃣Pla Pao, a grilled fish from the Mekong River, is a local river fish (usually catfish) that is freshly caught and grilled. The fish belly is stuffed with lemongrass, lemon leaves and Thai chili peppers, and the outer layer is coated with thick salt and slowly grilled. 
Taste: After serving, the waiter will help you crack the salt shell. The fish meat is tender and juicy, with the fragrance of lemongrass. Dip it in the special green chili sauce (Nam Jim Seafood), which is sour and spicy and appetizing! 
Tips: It is recommended to share with 2-3 people, and it is more authentic with sticky rice. 
2⃣Larb Moo, a classic cold dish from northern Thailand, stir-fry minced pork (minced pork) 🥩, then mix it with mint leaves, shallots, lemon juice and a lot of roasted rice. 
Taste: Sour and spicy with the charred aroma of rice, the coolness of mint leaves perfectly neutralizes the spiciness, suitable for ice beer! 
Spiciness warning: The default is the northern Thai spiciness. If you are afraid of spiciness, you can say &quot;Mai Ped&quot; (less spicy) in advance.
3⃣ Coconut milk chicken soup 🍲 (Tom Kha Gai) Compared with the stimulation of Tom Yum Goong, this soup is softer. Chicken thighs and straw mushrooms are cooked in coconut milk, garnished with galangal, lemon leaves and lime juice. 
Taste: Smooth and sweet at the entrance, slightly spicy at the end. 
4⃣ Fried spring rolls 🍢 (Po Pia Tod) Different from Vietnamese spring rolls, the fillings here are vermicelli, carrots 🥕, fungus and pork, and the skin is crispy to the point of falling off.
