Once again, I got to know another category of skewers, called xiaozhanzhan. The people of Yan&#39;an make their own spicy hot pot base with pepper as the main seasoning, and then boil it and use it to blanch the dishes. The meat is all frozen, and it is called xiaozhanzhan just after being boiled. Using sesame paste makes it a hot pot, and using vinegar and garlic makes it a small hot pot.
